Veal baked under sač* & Pro Corde
Ingredients:
- Veal knuckles without bones
- Mix of vegetables and fruit (sour apples)
- Red sweet ground paprika
- White pepper
- Salt
- White wine
Preparation:
Cut the meat into schnitzels 100-150 gr, 1 cm wide. Then, season them with the above-mentioned spices and cut the mix of vegetables and fruit into pieces and bind all with the meat.
Add some oil and white wine and bake at the temperature of 220 ° C for an hour and 40 minutes.
Bake under the sač, if possible.
(* Sač is a large metal or ceramic lid like a shallow bell, covering the meat to be baked, over which live coals are placed.)
